Ethanol
, also called grain alcohol, is a volatile, flammable, colorless liquid. The fermentation of sugar into ethanol is one of the earliest organic reactions employed by humanity. Ethanol has a very short carbon chain and its hydroxyl group is able to participate in hydrogen bonding, rendering it more viscous and less volatile than less polar organic compounds of similar molecular weight.
